Each winter, the barrel room at Lough Gill Brewery comes to life. After 12 months of quiet maturation, we unveil the next chapter in our award-winning Barrel Aged Series. For 2025, our brewers have curated a collection that celebrates one simple truth: the barrel is as important as the beer itself. Each stout in this year’s lineup has been aged in a distinct and storied cask from Cognac and Pedro Ximénez to Laphroaig Scotch Whisky each imparting its own character, depth, and soul. This is a release for those who appreciate craftsmanship, patience, and flavour with a story.

Spotlight on the Barrels This year’s series dives deeper into barrel provenance, celebrating the craft and history behind each cask:  Laphroaig Peated Scotch — imparting deep smoke, oak, and maritime notes in Warrior. Cardenal Mendoza Sherry Brandy — enriching Solera with layers of raisin, fig, and spice.  Irish Whiskey / Sherry Oloroso — lending Spear a warming sweetness and silky depth. Ex-Bordeaux Oak — adding vinous structure and subtle red fruit tones to Wine Geese. Pedro Ximénez — enhancing Tara with luscious dessert wine richness. Each beer is the result of time, selection, and balance brewed strong, aged slow, and packaged for those who savour every sip.
